The flavour profile of our second blend, The Fish Island, changed slightly when we began using a different bean from Timor-Leste. In addition to the toasty caramel, there is now a buttery sweetness similar date tart with a shortbread crust, especially apparent in an espresso.
With our blends, we always roast in advance and have them on our shelves because they require a considerable amount of rest (14 days at least).
