Time flies and we have come to the 3rd incarnation of the Fish Island. As tradition goes, the origins of this blend never change but everything else can (and often would…). This year, we have acquired a natural processed Timor that goes harmoniously with the Costa Rican washed processed, resulting in a blend that is fruitier and sweeter than usual, but at the same time still retaining the buttery nuttiness that is often present in the Fish Island.

With our blends, we always roast in advance and have them on our shelves because they require a considerable amount of rest (14 days at least).
