The famed Hacienda La Esmeralda probably doesn’t need any further introduction. Whilst most coffee lovers are familiar with its Geisha, their Diamond Mountain coffee label may be one that is less talked about.
Diamond Mountain lots come from two of La Esmeralda’s most productive and renowned farms: Jaramillo and Cañas Verdes and its mainly of the Catuai varietal. Catuai coffees have long been planted in Panama, and this variety is well-loved for its high production, disease resistance, and clean, bright cup .Natural processing at Hacienda La Esmeralda generally features drying for 3 to 5 days on concrete patios (8 hours per day). After cherries have reached sufficient dryness they are rotated into Guardiola driers for 72 hours to round out the drying process and prevent fermentation.
This coffee tastes of passion fruit and barely ripe mangoes, sweet and clean.
