Description
The Mierisch family has been farming coffee in Nicaragua for over 100 years. As a family-run operation, they have produced high quality shade-grown coffee. These days, they have 11 coffee farms in Nicaragua, and 3 coffee farms in Honduras.
In Nicaragua, the farms are located in the Matagalpa and Jinotega departments. Matagalpa is home to 8 farms, whereas Jinotega, a little bit farther north-west, is home to 3. Each farm has a unique micro-climate and soil composition, which makes their management, and coffee quality, truly distinct from one another.
The biggest challenge in Mama Mina has been the height at which it is located, because of the large amount of rainfall and the general lack of sunshine in the area. It was also a challenge to be able to locate the ideal varieties for those conditions. After many years of experimenting, the varieties of Catuai, Pacamara and Java have reached a good standard of productivity and excellent quality of coffee.
This coffee has a flavour profile of black currant, papaya skin, brown sugar and a slight smokiness and a sturdy body. It is no doubt a move away from the currently popular fermented options, but nevertheless an enjoyable cup.
