There is always a time in the year for at least one typical washed Yirgacheffe to come on our shelves. This one is what you would normally expect from a nice one of such, floral, citrusy and with a honey water finish.
The drying process is semi-shade slow dry. Having the wet parchment under shade for a period of time at the beginning of the drying process allows more precise sorting because one can see defects more clearly under shade and have them removed. The shade also protects the wet parchment from the harshness of direct sunlight when it is the most vulnerable. It has been observed that this drying method contributes to the longevity of the original qualities in the coffee.

The Harfusa cooperative, established in 1975, has 843 members and is part of the Yirgacheffe Farmers Cooperative Union (YCFCU). The union was organized in 2002 in an effort to establish stability amidst fluxuating coffee prices. Recognized under the national labor union, it represents 43,794 farmers over 6 districts including Yirgacheffe, Gedeb, Wanago, Dilla Zuria, Bule, and Kochere.

Cooperatives like Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) are exempt from going through the Ethiopia Commodities Exchange (ECX). This allows coffee buyers to pay premiums to farmers belonging to the union for better cherry selection at the washing station level to bring back the classic Yirgacheffe profile that was obscured for some years.
