Description
Israel Degfa is renowned for overseeing the production of some of the most most well known and popular Ethiopian specialty coffees served in cafes around the world and has almost become a seal of quality in himself. In 2018 he built the Anasora washing station on the banks of the river Turo, in the Guji region, and has begun processing cherry from local Oromo community of farmers.
The coop is unique in that they process both washed and natural coffees. At the peak of the harvest Anasora can employ several thousand who engage in all aspects of processing from depulping, fermenting, washing in canals, spreading and drying on raised tables, gathering, hand picking for any defects, bagging, distribution and export. About 350 local farmers contribute their production to the coop. In turn, the coffee goes through a painstaking quality control and grading process.
We have secured both the washed and natural Grade 1 coffee from Anasora this season and it shall be interesting when they are made available side by side on our roasting roster.
As for the washed coffee showcased here, apart from being floral and citrus, this coffee has a distinct resemblance of a strong black tea, making it pretty interesting to drink.
