Description
Every year without fail, we will bring you a honey processed coffee from Costa Rica. This year’s batch is a Black Honey processed from West Valley.
As many of you will know, the Honey process is a processing method that is in between the commonly seen Washed and Natural processes. Some of the mucilage (i.e. the coffee “flesh”) will remain on the bean when drying. There is also a spectrum to the degree of “honey-ing”, going from white to black, and the darker the honey, the more mucilage is remained on the bean during the drying process. So with a black honey processed bean, almost all the mucilage is kept on. At the same time, the darker the honey, the more work is involved. Black honey processed coffees require constant monitoring to avoid over-fermentation and mold developing, and frequent turning on raise beds for 2 weeks, so truly a labour of love!
Black honey coffee are usually fruity, sweet and fuller in body, and this West Valley one is no exception, a great option for both pour over and espresso!
