Description
Sometimes you get a coffee that is funky and complex. It is not your everyday coffee but it makes a very interesting drink, so you love it anyways, and this here is one of them.
This special coffee came about when one day, the owner of Finca San Jose, Ms Monsalve Botero, decided to try and ferment green coffee beans in a barrel which was used for fermenting rum (Ms. Monsalve Botero husband is a rum manufacturer). The process goes as follows: the coffee is chosen carefully, only matured grains in supremo size. It will will then be washed, classified and sun-dried. Afterwards, the coffee will be put in rum barrels made of Colombian oak for up to 3 months based on the quality controls that are performed monthly. The fermentation is done according to the Federacion Nacional de Cafeteros (FNC) standards.
The resulting coffee is complex, funky and delicious to drink. In the front, there is strong marzipan and rum, and as the coffee cools, rum raisin and peach surfaced, it is almost like having a cocktail!
